EVO oil is none other than extra virgin olive oil.

The acronym EVO was coined in order to more easily distinguish this type of oil from non-extra virgin olive oil (however olive).

The differences between the two oils, in fact, are not few.

EVO (or extra virgin olive oil) is obtained from healthy olives and is processed exclusively with mechanical methods.

It is obtained from olives harvested without ever touching the ground and which do not undergo any treatment (apart from washing and removing the leaves).

Olive oil, on the other hand, is a blend of virgin olive oil and other refined (i.e. chemically treated) oils.
